CUCUMBERS
What is it?
We grow two varieties of cucumbers, Market More 76 and National Pickling. Slicing cucumbers can be used for pickles just like pickling cucumbers! To find them, you will need to use your hands to gently part the leaves - the cucumbers will be laying on top of the row, UNDER the leaves, so you may not be able to see them at first. Look for slicing cucumbers that are about 8 inches long, pickling cumbers at about 4 inches long. Pickling cucumbers are not only for pickles, they are also very good eaten raw. Find where the cucumber meets the main stem of the plant, and carefully snip the stem with scissors.
Cucumbers are extremely hydrating, which we all need during an Arizona summer! They’re also full of fiber and vitamin K, which helps keep your bones healthy and strong.
How do I clean and store it?
Just rinse your cukes in cool water, rubbing off the little spiny bits with your hands and let them dry, and they’re good to go! Store them in a reusable silicone bag in the fridge.
